BBQ Butternut Mac 'n "Cheeze"

Butternut squash just screams "Fall," in my opinion. And, also in my opinion (maybe yours, too?) Macaroni and cheese/cheezeless is THE ultimate comfort food...and comfort food is a requirement for Fall. If you're in agreement, then you're going to love today's recipe..."BBQ Butternut Mac 'n 'Cheeze'"! Get your tastebuds ready...

BBQ Butternut Mac 'n "Cheeze"

Serves one (can easily be doubled, tripled, or quadrupled!)


1. One serving pasta of choice (I used Banza chickpea pasta, linked below, for some extra protein!)

2. 1/2 cup pureed butternut squash (can use canned, but reduce to 1/3 cup if you do)

3. 2 tsp dijon mustard

4. 2 T nutritional yeast

5. Onion and garlic powder, to taste

6. 1 T BBQ sauce of choice

7. 1/4-1/3 cup cashew OR coconut milk (omit if using canned butternut squash)

8. Avocado, S&P, and cayenne for garnish, optional (but recommended!)


1. Cook pasta according to package directions. Drain and set aside.

2. Combine butternut squash, dijon, cashew/coconut milk (if using), nutritional yeast, onion and garlic powder, and BBQ sauce in food processor and pulse well until combined.

3. Taste and add seasoning and sea salt as needed.

4. Combine "cheeze" and pasta over low-medium heat and cook until heated through and slightly bubbling (drool!).

5. Serve topped with chopped avocado, salt and pepper, and a dash of cayenne. Enjoy!
