Luscious "Leftover" Thanksgiving Turkey Salad

I hate leftovers. Yep, I said it. Always have...and I think I always will. Unless we're talking about leftover Thanksgiving turkey...that's a very different story! As a kid, my favorite part of Thanksgiving wasn't Thanksgiving dinner, when all the food was hot and fresh...it was the midnight cold turkey sandwich snack (dinner roll, cold turkey, and a thick layer of cranberry sauce and mashed potatoes) cuddled up on the couch next to my Aunt Karen. Precious memories!

If you've got a massive amount of turkey leftovers like I do, then you'll want to add this delicious (and super easy!) salad to your meal plan for this week. It's quick to prepare, includes only easy-to-find ingredients, and will satisfy any appetite. That's what I call a winner winner TURKEY dinner (or lunch or snack...yes it's that good!).

Luscious "Leftover" Thanksgiving Turkey Salad

Serves one (can easily be doubled/tripled)


1. 1/2 cup diced turkey (white meat)

2. One large English cucumber, peeled and chopped

3. 1/4 cup sweet or red onion, chopped

4. 1/3 cup dried, unsulphured, naturally-sweetened cranberries (omit if low sugar/SIBO/candida diet)

5. 3/4 cup non-dairy almond milk yogurt

6. 2 T dijon mustard

7. Juice of 1/2 fresh lemon

8. 1/4 tsp garlic granules

9. 1/2 tsp dried dill (or 1-2 sprigs fresh)

10. Sea salt and black pepper, to taste


1. Combine all ingredients in a large bowl and mix well until thoroughly combined.

2. Serve over fresh spinach. DONE! Wasn't that easy?
