Pumpkin Spice Latte Protein Bread
Oh. Yes. I. Did. Y'all. May I present to you the most delicious, allergy-friendly, healthy treat you will make this holiday season: PUMPKIN SPICE LATTE PROTEIN BREAD (duh-duh-DUHHHH!). This is seriously amazing...and addicting...and ONLY 7 INGREDIENTS. I know...just wait till you taste it! Okay that's enough talk...it's time to get cooking! Enjoy friends!



Topped with a thick and delicious layer of Kite Hill Almond Milk Cream Cheese. So yum.


Pumpkin Spice Latte Protein Bread
Ingredients
1. 4 eggs
2. 1/2 cup Vega Sport Performance Protein Powder, Mocha flavor
3. 1 cup packed canned pumpkin (NOT pumpkin puree, it will be too runny!)
4. 1 tsp baking soda
5. 1 T pumpkin pie spice
6. 15-25 drops Pumpkin Spice liquid stevia (or 2 T honey or maple syrup)
7. 1/4 cup coconut flour (NOTE: different brands of coconut flour have different textures/viscosities...I recommend using THIS BRAND for this recipe)
Method
1. Beat eggs with a stand mixer or electric hand mixer until peak form (will take about 5-10 minutes, depending on your mixer).
2. Add remaining ingredients and beat again for 1-2 minutes, or until thoroughly combined.
3. Pour batter into a lightly oiled or parchment-lined loaf pan and spread evenly.
4. Bake at 350 F for 30-40 minutes (varies depending on oven), or until knife inserted in center comes out clean.
5. Let cool 10-15 minutes before slicing.
6. Store in fridge for up to 5 days. Delicious topped with THIS STUFF.
