Cucumber-Apple Salad with Lemon Basil Hemp Vinaigrette
Did you know that June 5-11 is Hemp History Week?! (No, I really didn't make that up--Google it!) I fell in love with hemp about 5 years ago--I purchased a bag of organic hemp hearts after seeing Instagram pictures of smoothie bowl after smoothie bowl delicately sprinkled with the little seeds. After my first hemp-adorned smoothie bowl, I was hooked! My most recent obsession, however, is hemp seed oil! Loaded with healthy omega fatty acids, hemp oil's slightly sweet, nutty flavor makes it the perfect addition to any recipe.


Cucumber-Apple Salad with Lemon Basil Hemp Vinaigrette
Ingredients
1. One large English cucumber, sliced and halved
2. One large pink lady apple, chopped
3. 1/2 white onion, thinly sliced
4. 5 white button mushrooms, sliced
5. 1 T fresh chopped basil
6. 1/4 cup hemp seed oil
7. Juice of two fresh lemons
8. 1/2 tsp sea salt
Method
1. Add all salad ingredients to a large bowl and toss to combine.
2. Whisk hemp oil, lemon juice, and salt in a small bowl and pour over salad. Toss well to coat.
3. Cover and refrigerate for at least 1 hour. Enjoy!
